Considering business class direct return fares are around $8k to $10k return from Sydney/Melbourne I'd say people wanting a bit extra comfort will pay for the Virgin business seat and stop over for the $2k return current price tag

Premium cabins are full - on Qantas a lot of spare seats within 24-48hrs go to those with commercial upgrade requests. With Economy cabins I suppose a lot of people are tightening belt and burning through cash more for life necessities over luxuries.

This happens all the time on flights even in business class.. just accept that it's a frozen meal heated up in an airplane oven regardless in business or economy.
